I can never seem to bring up Korean food to people without talking about this dish – tteokbokki, or spicy rice cakes. A classic appetizer or snack, or even meal, these rice cakes are hot both in temperature and spice level. I admit that I wasn’t a fan of them when I was younger, but have grown to tolerate and sometimes even enjoy the spice because of its sumptuous flavor and comforting vibes. Between the chewy rice cakes and the flavorful sauce, I am a happy camper.
Today I followed Maangchi’s recipe almost to the tee (I didn’t bother with measuring ingredients) and somehow, even though I’ve used “fancier” or more complex recipes, today’s tteokbokki was the best tasting tteokbokki I ever made. Watch me make these spicy rice cakes on TikTok.
I can’t believe today also marks the end of Week 3! This week has flown by, possibly because it featured my favorite cuisine. I am excited to embark on the last and final week of this challenge, especially since I will have time off to really put in the time and energy for more technical and impressive dishes. Stay tuned!
