My favorite pasta shape is spaghetti, and I love the creaminess and saltiness of spaghetti carbonara. I have seen this dish made in so many different ways on YouTube, some of them calling people out for not making the “authentic” Italian version. From breaking the raw pasta in half, to using bacon, to garnishing with parsley, my dish is definitely not authentic, but I can definitely say it tastes delicious.
I didn’t really follow a specific recipe this time. I usually “go with my heart” when it comes to spaghetti carbonara. It’s so simple – just spaghetti, egg, parmesan cheese, bacon, and lots of black pepper. I went a little fancy this time and bought actual pecorino cheese to grate.
Watch me make my last dish of Week 1, spaghetti carbonara.
P.S. Update on the red wine sangria – it definitely tastes better overnight and room temperature!
