Day 8: Garlic Confit

Today’s theme was my favorite vegetable – garlic.

As I mention in my TikTok for today’s challenge, you don’t typically think of garlic when you think of vegetables, but it’s so delicious and I’ve been dying to try garlic confit. Also, my fiancé is grateful for the break from washing dishes…

I first learned about garlic confit on TikTok and apparently “confit” just refers to food that’s been slow cooked in fat which makes the garlic super soft and spreadable. The recipe is so simple – take a bunch of peeled garlic, add a sprig of rosemary, cover it in olive oil, and cook in the oven at 225 degrees for 2 hours. It’s nice to be able to make something that doesn’t require actively moving around and cooking.

You can’t go wrong with garlic bread, so I was in love with the idea of spreading it on some bread. You can also put it in some pasta, soups, sauces, marinades, sandwiches, ice cream (just kidding, but no shame if that’s what you’re into), you name it. It might have needed even more cooking time, but it still only required a light “squish” of the knife. You can definitely taste the garlic, but without the rawness. I also spread on some butter to taste the combination and it was even better – the slightest saltiness with a surprisingly sweet flavor overall. 10 out of 10!
