The food that tends to remind me of home is kimbap, which is often referred to as Korean sushi, although it’s more like a maki roll because the the seaweed is on the outside wrapping around rice. But it’s also different from sushi in that it does not use raw fish. Typically, the filling is beef bulgogi or imitation crab or spam, but you can also use kimchi or just do a veggie kimbap or any filling that you want really.
I had some bulgogi leftover from the Korean BBQ a couple nights ago, so this was the perfect opportunity to use the leftovers. As much as I love kimbap, it can be tedious because there are lots of components to it and you do have to take time to assemble the kimbap. But once it comes together, it looks so pretty cut up into bite-sized slices with its beautiful array of colors.
