Today’s challenge is yet another excuse for not needing to wash as many dishes and features my favorite fruit, watermelon. As part of my week of Korean cuisine, I made a cocktail called subak soju, or watermelon soju, which is exactly what it sounds like – soju mixed with watermelon.
Essentially, you take a watermelon (probably best to use a mini one), cut it in half, remove the watermelon flesh, puree it, sieve it back into the watermelon, and mix it with soju. So simple! It’s great because watermelon juice is so inherently sweet and refreshing which pairs very well with the “harshness” of the soju. It makes for a great summer-y cocktail, especially when you want to look fancy carrying a mini watermelon, and I decided I would still enjoy it in the middle of December.
