Day 26: Lemon Lime Tart

Today’s challenge is a tart – something I have never baked before. On top of that, I am taking a citrus-y route with the combination of lemon and lime, as well as decorating with some toasted meringue and gold flakes.

It was a bit tricky to find a recipe for this particular dish, but fortunately I found one on YouTube that is specifically for lemon, so I basically split the lemon measurements between my lemon and lime. It’s actually not very technical, but there were so many steps that required long stretches of time (1 hour for the filling to chill, 30 minutes for the dough to chill, 30 minutes for the candied lemon and limes to cook), so it was definitely a time-consuming process.

The tart was interesting – the first bite was quite a zing on the taste buds with the strong lemon and a hint of lime at the end which gave it a bitterness that I honestly did not find pleasant. But the more that I ate the tart, the more I enjoyed it. The sweetness of the meringue paired well with the sour citruses, and the tart shell was addicting, making me want to take bite after bite. Long story short, I ended up finishing the tart (it helped that it was more of a miniature tart than a full one!) Overall, it was too labor intensive for me to want to make this again, but I am proud of myself for tackling this challenge and for making a tart for the first time!
