Day 28: Instant Pot Beef Stew

Today’s dish is one of my fiance’s favorites – beef stew. I used a recipe from Damn Delicious, although I may have accidentally looked at a pot roast recipe instead and got a different cut of meat. I also added a splash of red wine because I had some leftover from yesterday’s moussaka recipe and wine not add some?

It was refreshing to have a recipe that doesn’t require a bunch of standing around and watching the stove, or lots of complex steps. The only time consuming part was the prep, and then the instant pot did the rest. It was also nice not having to move my camera set-up several times since this is basically a one-pot recipe.

The stew was so sumptuous and comforting. The meat was falling apart and all the veggies were properly cooked while still maintaining their own flavors. I completely forgot that there was any celery in it because it disintegrated so beautifully into the stew. The stew had a lovely beef-y taste with some nice herbs and what I think is a slight tang from the red wine. I highly recommend this for someone who wants a delicious one-pot recipe that comes together within an hour. The inclusion of various veggies are a big plus!
