Can you believe we’re only 1 day away from the end of this 30 day challenge??? I can’t either. Today we’re doing another international dish – Moroccan chicken tagine. I have technically made a version of this dish several times before because it was one of my favorites from HelloFresh back when I had their subscription, but it definitely takes some shortcuts compared to the original Moroccan recipe.
The recipe that I used today came from Once Upon a Chef and is pretty similar to the HelloFresh recipe that I remember. One major difference is the use of bone-in chicken thigh with skin which was great because it meant that I could purchase natural chicken thighs without having to take the time to trim the chicken thighs since the fat cooks off and the skin gets discarded.
This chicken tagine was by far tastier than any that I have made through HelloFresh. The bone-in chicken thigh really took the meat up a notch with its juiciness and the stewy sauce was so flavorful – I could have drank it like a soup! Paired with some couscous, this dish is so comforting. I highly recommend giving this a try sometime.
