Day 30: Earl Grey Macarons

We made it! If you have been following since Day 1, or even Day 15, thanks for sticking around. It’s been a long journey and it’s crazy to think that I have finally completed this challenge. Not going to lie, there were definitely days that were tougher than others, especially towards the beginning when I was staying up late trying to complete each day of this challenge. But it somehow got easier, feeling more like a habit the more that I did this challenge, and I made it!

For today, I thought I would finish with a bang by baking something that I’ve made a handful of times before, but trying a new flavor – earl grey macarons! I used the recipe from the Baker’s Almanac and it was basically a regular macaron recipe with chocolate ganache filling but adding earl grey tea leaves for the flavor and blue food coloring. I unfortunately had a bit of a food-competition-TV-show moment in the kitchen today and had to restart my whole batter after it came out too runny. The second attempt was much better, but still wasn’t quite the lava-ness that holds its structure. My cookies turned out a bit more fragile and hollow – but as my fiance likes to say whenever I have such mishaps, they still tasted good! The earl grey-infused chocolate ganache is so simply, but pretty ingenious with its distinct earl grey flavor while also nicely sweet and chocolate-y.
