I am a bit late on my New Year’s food posts, but I am cutting myself a bit of slack after a month straight of food blogging. To kick off the New Year, I surfed the web for a bit and learned about different foods that are eaten to bring good luck or start the new year off right. Specifically in the Southern United States, it is said that black-eyed peas look like coins and collard greens represent dollar bills, making them good foods to bring wealth in the new year. Sounds like a good deal to me!
The recipe I used was basically this Instant Pot Black Eyed Peas recipe, but with the addition of collard greens, red pepper flakes (I used a whole teaspoon and it had more of a kick than I would prefer, so I’d recommend around half a teaspoon unless you want more intense heat), and another smoked turkey leg because why not. Of course, no Hoppin’ John is complete without some white rice so I cooked that separately and mixed it with my black-eyed peas, collard greens, and turkey to get this comforting Southern dish.
All in all, the dish is very simple to put together. It’s basically throwing a bunch of ingredients into an Instant Pot to cook for 30 minutes and cooking white rice separately to then combine with the rest of the ingredients and voila! Dinner is served.
Side note, this is maybe the fifth time I’ve used my Instant Pot ever, and the first few times were to make basic rice, so making recipes like this has inspired me to want to use my Instant Pot more often.
